Spring Greens Salad


(With dried apricots and goat cheese)
Spring greens are easy to assemble into a salad. They need a slightly sharper dressing since it is tough to evenly coat a bunch of leaves.
Salads with greens have to be picked and eaten with a fork. If the other ingredients are amenable to being picked in the same stroke, that makes it easy and interesting to eat. Typically add a firm cheese and fruit. Some nuts and one element of flavor to complement the
greens. And a sweet-sour oil based dressing. For this one I add dried apricots cut into strips and some goat cheese. Some sliced onion for
flavor; and toasted almond flakes for crunch. The dressing is white wine vinegar, honey, salt, pepper and extra virgin olive oil.
